Warm Dark Chocolate Pudding with Orange & Nostalgia

  • * I've made this pudding using rice milk but you can substitute it with soya milk or cow milk. Quantities will be the same.
  • 350ml rice milk
  • 50g corn starch
  • 50g unsweetened cocoa powder
  • 30g brown sugar
  • 50g dark chocolate 70% (I've used Orange Lindt Excellence bar)
  • 1 organic orange for grating
  • 1 pinch of nutmeg
  • Some walnuts to decorate
  1. Pour the cold milk into a pot, stir in the sieved corn starch and the cocoa stirring carefully with a whisk to get rid of lumps. Add the brown sugar.
  2. Grate some orange zest.
  3. Break chocolate into small pieces and leave it to melt in a bain-marie, then add some of the orange zest (leave a little aside to decorate).
  4. Put the pot with the milk on a medium heat and stir continually. When the milk is almost boiling add the melted chocolate. Whisk well to combine and keep it on the heat till it starts to become dense. Add a pinch of nutmeg.
  5. Pour it hot into the cups and decorate with the orange zest and some crumble walnuts.
